Shish Tawouk Wraps

Ingredients:

  • 1kg of chicken breast, diced
  • Saj, Mountain or Lebanese bread
  • Pickled cucumbers
  • Garlic spread (Toum)
  • 5 potatoes, cut into fries (frozen chips can be used)
  • 1/4 cabbage, finely sliced
  • 1/2 cup Kewpie Mayonnaise
  • Tomato sauce

Marinade for chicken:

  • 1/2 cup Greek natural yoghurt
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 6 garlic cloves, crushed
  • 1 Tbsp tomato paste
  • 1 Tbsp paprika
  • 1 Tbsp cinnamon
  • 1 Tbsp oregano
  • 1/2 Tbsp ground ginger
  • Salt and pepper, to taste

In a bowl, combine marinade ingredients and then add the chicken. Mix together well and then leave in fridge for at least four hours so flavours can infuse. (Even better if you can prepare tawouk mix the night before).

In a bowl, add finely sliced cabbage and mayonnaise. Mix well and refrigerate.

Cook the potato fries.

Put pan on medium heat and fully cook chicken.

Start to assemble wrap by placing garlic spread on bread, followed by potato fries, shish tawouk, pickled cucumbers, cabbage mix and tomato sauce.

Roll up bread and place in a sandwich press until crispy. Remove and enjoy!
